TOMATO ONION SAMBAL

2 ripe tomatoes, peeled
1 onion, finely chopped
1/2 cup parsley, chopped

Dice tomatoes, combine with onion and parsley. Mix well and refrigerate.

CUCUMBER YOGHURT SAMBAL

1 cucumber peeled, sliced
1 tsp salt
200ml plain yoghurt
1 clove garlic, crushed

Place cucumber in a bowl and sprinkle with salt. Stand 30 minutes. Rinse cucumber under cold water and drain well. Combine yoghurt, garlic and cucumber. Mix well and refrigerate.

MANGO MINT SAMBAL

2 mangoes
1 tbs mint, chopped

Slice mango neatly and combine with a bowl with mint. Make just before serving.
