500g spaghetti
300g red ripe plum tomatoes
4 cloves garlic
1/2 cup chopped rocket
1 1/2 tbs olive oil
salt and black pepper
Skin the tomatoes by plunging into boiling water for a few minutes and peeling. Chop the tomatoes finely and place in a large bowl together with the garlc and rocket. Add the olive oil and salt and pepper to taste and leave for 2 hours.
Cook the pasta as usual, drain and stir in the sauce. Heat through and serve.
