Smashed Potatoes Two Ways

GARLIC SMASHED POTATOES

Wrap potatoes individually in foil and cook in covered barbecue or oven for about 45 minutes or until tender. Place potatoes on flat surface and flatten with a potato masher so that they are about 2cm thick. Just before serving remove foil and brush with 2 cloves of crushed garlic that has been combined with 100gm melted butter. Sprinkle with chopped parsley or basil.

SMASHED POTATOES WITH PIZZA THYME

Microwave or cook potatoes in salt water until tender but not split.  Place on a tray lined with greaseproof paper and flatten with a potato masher so that they are about 2cm thick.  Drizzle each with a little olive oil and sprinkle with sea salt and pizza thyme leaves.  Bake in moderate oven for 25 to 30 minutes until golden and crispy at the edges.  Serve immediately.
