Fried Chorizo with Garlic

Fried Chorizo with Garlic Recipe

4 (680g) chorizo sausages
1 tablespoon olive oil
2 cloves garlic, crushed
¼ cup Italian parsley, finely chopped

Cut sausages diagonally into slices.

Place the chorizo slices in a cold frying pan without oil and place it on the heat.  As it heats, the fat will render out of the chorizo.  Stir until it is crisp and brown.  Drain on absorbent paper.

Use a paper towel to wipe the fat from pan.  Place it back on the heat.

Heat the olive oil in the pan and return the chorizo slices, garlic and parsley.  Heat through for two minutes and serve with Italian bread, feta and olives.
