MINT GLAZE
2 tbs water
1/3 cup brown vinegar
2 tsp gelatine
1 tbs sugar
¼ cup mint, chopped
Combine water and vinegar in a saucepan. Add gelatine and sugar. Bring to the boil, stirring constantly and add mint. Cool to room temperature and use to glazing lamb chops or roast before and whilst cooking. Serve with sprigs of mint.
