250g button mushrooms
2 tbs lemon juice
1/2 cup olive oil
2 tbs parsley, chopped
Salt and pepper
1/2 tsp French tarragon
Wash mushrooms, remove stalks, slice thinly. Combine lemon juice, oil, salt, pepper, tarragon and chopped parsley. Mix well. Add mushrooms and mix well. Cover. Marinate mixture for 4 hours or overnight.
Marinated mushrooms are delicious tossed into a green salad with some of the marinade as a dressing. Walnuts add a cruncy texture.
