Common Name: Silverbeet
Latin Name: Beta vulgaris var cicla
Description: This is a high yielding variety with deep green crinkled leaves and broad white stems. It makes an excellent cut-and-come-again vegetable if you harvest the outer leaves only. Annual. Height 50cm.
Harvesting: Harvest the outer leaves at any size by breaking them off at the base. Store in fridge.
Best Results: Grow silverbeet in full to part sun in rich, well drained soil. Keep the soil well watered and apply a liquid fertiliser fortnightly. Will grow well in large pots.
Uses: Steam the leaves lightly and serve as a vegetable or use silverbeet in classic Greek dishes. The stems are edible but need a few more minutes of cooking.
Companion: Plant with onions and kohlrabi.
